About the Author

Jenny Huige-Wensel was only twelve years old when her father died. This tragic event convinced her to become a nurse. She studied nursing in her native country the Netherlands. After her training she went to work as a Registered Nurse in The Netherlands, Switzerland, Belgium and the United States. She traveled with her husband Bill, in a sailboat, from Milwaukee to Florida where they sailed extensively in Florida and the Bahamas.


Her interest in cooking was acquired from her mother, who is an excellent cook (If you don't believe me, try her Oxtail soup recipe. It is the best in the world). Having lived and worked in so many different localities provided Jenny with the opportunity to sample a variety of cooking.

The Dutch cuisine is different from the rest of Europe, the Dutch colonist brought spices home from Indonesia and integrated these in Dutch cooking, providing a distinctive flavor. Though it is difficult to find all the spices used in these recipes, many are available in Dutch or Oriental food markets throughout the United States. If one cannot find them locally, they are always available through the Internet at www.allthingsdutch.com. I highly recommend you locate the spices necessary for making the Dutch Nasi Goreng and the chicken livers sauteed in rice wine and star of anise. In addition, don't overlook the peanut sauce and the Ketjapa sweet soy sauce used for cooking and marinating (which is excellent when served over rice).

Jenny's adventures finally let her to the Florida Keys where she had the fortunate opportunity to meet several excellent chefs from which she was able to wrench some of their famous seafood specialties. The recipes were developed for use in restaurants,
however, she was able to adapt them for family use.
If you have never eaten shrimp scampi, I can promise you
it will be a gastronomical delight. The use of a stuffing mix to flavor
fresh fish is another pleasant surprise you'll find within the confines of this book.
The secon edition contains an additional thirty-five recipes not in the original book.
Each recipe has been used and will continue to be used in our house as well as in yours. I'm sure that you will enjoy them as much as we do.

Sample Recipe:
JENNY'S SHRIMP SCAMPI


˝ - 1 pound cooked and peeled shrimp (you can leave on the tale piece)
1 stick butter
2 bunches scallions (include the green tops), sliced
4 cloves garlic, pressed
8 oz. mushrooms, sliced
˝ cup sherry / white wine
wild rice
1 sm. can water chestnuts

Melt butter in frying pan, add garlic, stir and add the scallions and mushrooms, saute. Don't over cook them.
Add the sherry. At the end put in the shrimp,(just to warm them).

Serve over wild rice with water chestnuts.
